Dear Good News family and friends—

We are extremely thankful that God spared most of us from the worst of Irma’s fury. Most of our 36 member team are safe and without major damage to our property. We certainly hope our customers and Realtor® community are safe as well.

Unfortunately, our main office in North Venice was without power until late yesterday afternoon. We also had some water intrusion, but our preparation prevented any equipment damage. Though we planned to be open yesterday, without power, it was simply impossible. Most of us appreciated the extra day to clean debris from our yards and get re-settled. Our new Lakewood Ranch location is still without power today.

We regret we have not been able to respond to your calls since Friday. All of our office staff and most of our technicians and inspectors are fully operational today and will try to get to you as soon as possible. We will also be open for business this Saturday in order to catch up from missed services this week. Please be patient with us as we recover. We will do our best to serve you with excellence.

Please be safe during the cleanup

If you have standing water on your property, please be sure to watch out for floating mats of fire ants. They can look like ribbons, streamers, mats, or even a “ball” of ants floating on the water.

When handling debris—especially after it has been sitting for a few days—be extra careful, since fire ants love to try to re-establish their colonies under wood, furniture, or even carpet strips.

Spooky Bat Cookies

Spooky Bat CookiesAdmit it, you sometimes come to this site just to find something scary, especially this time of year. Well, you’re in luck! Our post this week is super scary… Scary goodness, that is!

Everybody loves a tasty cookie and these fun cookies will surely hit the spot. Give your little princesses and superheroes a real treat, or save these for the adults’ party! Either way these Spooky Bat Cookies are sure to please!

Spooky Bat Cookies

Ingredients:

  • 24 round chewy caramels in milk chocolate (from 12-oz bag), unwrapped
  • (or substitute fun size candy bars for chocolatey-er bats)
  • 1 package (16 oz) Pillsbury™ Ready To Bake!™ refrigerated chocolate chip cookies (24 cookies)
  • 24 chocolate wafer cookies, broken in half
  • 12 black gumdrops, cut in half lengthwise
  • 48 red mini candy-coated chocolate candies
  • Optional – for Vampire bats, you’ll also need 48 candy corns

Directions:

  1. Preheat your oven to 350°F.
  2. Press 1 caramel (or chocolate) into center of each cookie dough round, and shape into a ball to cover caramel completely.
  3. Place balls approximately 2 inches apart on an ungreased cookie sheet.
  4. Bake for 9 to 12 minutes or until lightly browned on edges and set.
  5. Immediately insert chocolate wafer halves into cookie at an angle for bat wings.
  6. Press gumdrops and red candies on cookie for eyes as shown.
  7. If making Vampire bats, press the candy corns in now, too.
  8. Remove from cookie sheet to cooling rack.

This recipe makes 24 fun little bat cookies for the whole family to enjoy! And Happy Halloween!

Best Pumpkin Pie Recipe Ever!

Best Pumpkin Pie Recipe EverSo, fall has “officially” arrived according to our calendar. The first day of the autumnal equinox was September 22, 2013. It doesn’t really feel like fall  here in Florida. It’s still muggy, humid, and warm.

So, in the “spirit” of fall and fun, we thought we would share with you something that signifies autumn like no other: PUMPKIN PIE!

We searched high and low and believe we have found the best pumpkin pie recipe ever. Big thanks to Paula Deen and the Food Network for this outstanding recipe. Here it is!

Best Pumpkin Pie Recipe 

Ingredients:
1 (8-ounce) package cream cheese, softened
2 cups canned pumpkin, mashed
1 cup sugar
1/4 teaspoon salt
1 egg plus 2 egg yolks, slightly beaten
1 cup half-and-half
1/4 cup (1/2 stick) melted butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger, optional
1 piece pre-made pie dough
Whipped cream, for topping

Directions:

Preheat the oven to 350 degrees F.

Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. Pinch and crimp the edges together to make a pretty pattern. Put the pie shell back into the freezer for 1 hour to firm up. Fit a piece of aluminum foil to cover the inside of the shell completely. Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.

For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.

Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.

Wow…sounds amazing, doesn’t it? Be sure to store the left-overs (if you have any!) safely in the refrigerator to keep the pie fresh and safe from any critters that might try to sneak a bite!
