Fruit Pizza: A Great Summertime Dessert!

With the warmer than usual summer temperatures we’ve been dealing with over the past month, turning on the oven is likely the last thing you want to do. But we promise it’ll be worth it for this extremely tasty treat!

 

Plus, boasting only 320 calories and 35% of your recommended daily allowance of calcium, it’s a delicacy in more ways than one!

 

Ingredients

 

  • 1 roll (16.5 oz) Pillsbury™ refrigerated sugar cookies
  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup sugar
  • ½ teaspoon vanilla
  • 2 kiwifruit, peeled, halved lengthwise and sliced
  • 1 cup halved or quartered fresh strawberries 
  • 1 cup fresh or frozen blueberries
  • ¾ cup fresh raspberries (optional)
  • ½ cup apple jelly
  • 1 teaspoon grated fresh lemon zest (optional)

 

  • 12-in. pizza pan
  • Parchment paper or non-stick cooking spray
  • An electric mixer
  • Glaze brush (optional)

 

Preparing the Crust

 

Heat your oven to 350-degrees. Line the 12-inch pizza pan with a 14-inch round of parchment paper or spray it with non-stick cooking spray. Break up the refrigerated dough and press it as evenly as you can around the pan. You’ll want to leave about a ½-inch of the outside edge of the pan open.

 

Bake 16-20 minutes – the crust will turn golden brown.

 

Set on cooling rack for about 30 min, until it’s completely cool. You can leave the crust covered at room temperature for up to a day if you’d like to wait before adding the good stuff.

 

The Cheese Goes First

 

In small bowl, use an electric mixer on medium to beat cream cheese, sugar and vanilla. You’ll want to get it nice and fluffy. For a fun taste twist, stir the lemon zest in as well.

 

Spread the cream cheese mixture evenly over the crust.

 

Add the Toppings

 

Now arrange the fruit over the cream cheese base. You can just do each fruit randomly. Or you can get stylish with concentric rings, make a series of small rows, whatever looks good to you.

 

Stir the apple jelly until smooth. For a smoother texture, you can put the apple jelly in a microwave safe bowl and heat it for 7-10 seconds. If you want to get fancy, use a currant or raspberry jelly instead.

 

The jelly can be brushed or carefully drizzled from a spoon over the top of the arranged fruit.

 

For a little sweeter taste, you can substitute white chocolate drizzle, or caramel or chocolate syrup. Or just have the syrups available for guests to add to their servings.

 

Refrigerate for at least an hour. Then cut into slices or squares and serve!

 

Cover and refrigerate any leftovers. The good news is you shouldn't expect a lot of this left behind.
